Make a Divine 3-Tiered Coffee Cake with our Nespresso Coffee Capsules

Ingredients: 

Coffee Cake 

  • 450g Cake Flour
  • 5 tsp Baking Powder
  • 1 tsp Salt
  • 375g Margarine
  • 6 Large Eggs
  • 400g Sugar
  • 15ml Vanilla Essence
  • 80g Cocoa Powder
  • 80 ml Espresso
  • 40ml Boiling Water
  • 30ml Oil
  • 1 cup Thick Buttermilk
  • 1/2 cup Milk

Coffee Buttercream Icing

  • 250g Margarine
  • 5ml Vanilla Essence
  • 80ml Strong Espresso
  • 4 - 6 cups Icing Sugar

Coffee Syrup 

  • 80ml Espresso
  • 1 tbsp Castor Sugar

Chocolate Ganche 

  • 1/3 Cup Heavy Cream
  • 1 Cup Dark Chocolate

Instructions 

  1. Start your coffee cake mixture in a bowl, sieve flour, cocoa powder, baking powder  and salt together.
  2. In a separate bowl whisk margarine until fluffy and add the sugar and vanilla essence. Continue whisking until well combined.
  3. Add the eggs one at a time to the margarine mixture and beat well between each addition.
  4. Add espresso, boiling water, buttermilk, milk & oil to the margarine, egg mixture and beat well.
  5. Add sieved dry ingredients to the margarine and coffee mixture. Mix together until everything in incorporated together.
  6. Divide the mixture into 3, well greased baking pans. Bake for 30 minutes at 108 degrees Celsius. 
  7. Prepare your buttercream by mixing the margarine, vanilla essence, espresso and icing sugar together until fluffy (icing should be a toothpaste consistency).
  8. Then make your coffee syrup by mixing espresso and castor sugar together.
  9. For the chocolate ganache bring the heavy cream to a boil. Remove from the heat and add the chocolate and mix together until the chocolate is fully melted and incorporated into the cream.
  10. Before you assemble your cake take the bottom layer of the cake and use a syringe to pour 15ml of the coffee syrup over it.
  11. Add 2 scoops of the buttercream icing on top and smooth this our to the edges of the cake.
  12. Add the second layer of cake and repeat step 4 & 5.
  13. Add the 3rd layer of cake and repeat step 4 & 5.
  14. Use the remaining buttercream to ice the sides of the cake and smooth this out
  15. Add the ganache to the edges on the top layer and create a dripping effect on the side of the cake with a piping bag.
  16. Add dollops of buttercream with the remaining icing and decorate with dark chocolate drops.
